Chocolate Chip Cookies

I wasn’t certain I was gonna post this…  They’re kinda my ace in the hole as far as awesome stuff goes.  But since I’m going absolute bonkers with making these things, I figured the recipe was safe to share (or inflict) on all of you.

Killer Chocolate Chip Cookies

2 cups flour
1/2 tsp soda
1/2 tsp salt
1 tbsp unsweetened cocoa powder
3/4 cup butter, melted (1 1/2 sticks)
1 cup packed brown sugar
1/2 cup white sugar
1 tbsp vanilla
2 eggs
2 cups chocolate chips (1 cup semisweet, 1 cup bittersweet)

Sift dry ingredients together; make certain cocoa is well blended to the flour.

Cream butter and sugars, add vanilla and eggs.  Mix well.

Slowly add dry mixture, once fully mixed, add the chips.

Let chill 1-2 hours.

Bake at 325 for 15-20 minutes (my oven bleeds heat like a bitch, so mine tend to be in nearly 30 minutes)

I need an intervention

Much in the same way that Fall is pie season, February is cookie season.  Not only is it a MISERABLE time of year in general, with blustery, wet, slushy mess whenever you go outside, the Girl Scouts are out and about spreading their little bits of crack.

Yes, our house is full of Girl Scout cookies.

Additionally, after getting nice and sick while grocery shopping on Valentines (go go antibiotics not playing nice with my tummy), I self-medicated with some free store samples of Ginger Snaps.  (Ginger settles the stomach.  It really does!  And not just me using it as an excuse for nom nom ginger snap cookies.)

They were so good, I brought some home with me.

And because they always come in threes, we got in a conversation about my raspberry-filled shortbread cookies over lunch the next day.

I actually said “Hrm, I should make those again…  I’ll make cookies tomorrow!”

Then I stopped and looked around at the contents of my house:

1 tub ginger snaps

approximately 15-bajillion boxes of Girl Scout cookies

And I was wanting to make more??  oy vey.
